Broccoli soup

3.5 oz. (100g) Landana 1000 DAYS
2 cups fresh broccoli
2 lbs (900g) chicken breast
1 cup potatoes
1/4 cup celery root
1 bunch flat parsley
1/2 handful chervil
2 lovage twigs
ground red pepper
2-3 drops of Tabasco sauce
4 tsp. fresh cream

Preparation Method:

Separate whole small broccoli flowerets from stalk, wash flowerets and cook in stock around 5 minutes until firm to bite. Remove with a skimmer and set aside. Wash potatoes, stalk and celery, then peel and dice. Cook everything in stock 15-20 minutes until soft.

Grate Landana 1000 DAYS, rinse herbs, pad dry and finely chop. Set about 1 tsp. aside. Purée vegetables with flat beater. Add cheese and melt into hot soup. Add broccoli flowerets and herbs to soup. Season with salt, pepper andTabasco.

Pour soup into soup bowls, garnish each serving with 1 tsp. cream, grated Landana and a little red pepper and sprinkled with the herbs that were set aside.
