Turkey steaks with cheese-herb crust
4 turkey steaks (5 oz. each/150g each)
3 tbsp. melted butter
For the crust:
2 oz. (50g) Landana OLIVES & TOMATOES
1 garlic clove
2 tbsp. melted butter
1 bunch each of parsley and basil
1½ tbsp. butter
2 tbsp. bread crumbs
1 tbsp. grated lemon peel
a pinch of thyme
Wash turkey steaks and pat dry. Season with lemon pepper and allow to simmer in a covered pan.
For the crust: Peel shallots and garlic clove and finely dice. Sauté while stirring in hot melted butter until translucent. Wash herbs, pad dry and cut into coarse leaf pieces, then add to shallots. Heat butter and lightly brown bread crumbs. Add lemon peel and mix. Coarsely grate Landana OLIVES & TOMATOES.
Sear turkey steaks on both sides in hot melted butter. Thoroughly fry on each side at low heat for 3-4 minutes, and salt. Evenly spread shallot-herb mixture, bread crumbs and Landana over steaks and lightly press. Place under the preheated grill at the highest setting for 3 minutes until golden yellow and, finally, decorate with a few thyme leaves.
Serve with peppers and small fried potatoes seasoned with rosemary.
